THE MOST DECADENT RAW CACAO & AVOCADO MOUSSE
Tonight for dessert we are enjoying a small cup full of the most rich and decadent raw cacao & avocado mousse. It is insanely creamy and delicious, and naturally sweetened with dates. You could also use 3 tbsp of honey, maple or brown rice syrup in place of the dates if you prefer. To prepare, simply place the following in to a high speed food processor, 1 avocado, 1/2 cup pitted medjool dates, 3 heaped tablespoons of cacao/cocoa powder, and a pinch of sea salt. Blend until smooth. With the food processor running, add 1/4 - 1/2 cup of coconut milk until the mousse has reached the desired consistency. Place in fridge to chill if you like, or devour straight away if you simply can not wait! we served ours with a sprinkling of coconut sugar (but totally not necessary!) Serves 2-3. Enjoy!
