BARLEY, SWEETCORN & AVOCADO SALAD TOSSED WITH CHILLI LIME DRESSING

Tonight for dinner I made this fantastically flavourful barley, sweetcorn and avocado salad, tossed with an incredibly punchy chilli lime dressing. I served it alongside some delicious organic beef sausages. The perfect summer dish packed full of crunchy textures, vibrant colours, and fresh bright flavours. Enjoy!

4 sweetcorn, cooked and kernels sliced
1 cup Sunrice brown rice & barley mix*
1 red onion, diced
a large handful of fresh coriander, roughly chopped
a large handful of Italian parsley, roughly chopped
1 tsp chilli powder, or chilli flakes
a good glug of extra virgin olive oil
juice of 2 limes
sea salt
pepper

*The Sunrice mix is available in supermarkets nationwide.

Cook the brown rice & barley according to the manufacturers instructions, set aside to cool.

Once cooled, toss with the remaining ingredients, and then season to taste with sea salt and ground pepper.

  8. Hi, i've been led to believe that barley isn't gluten free? it also says on the sunrice packet that gluten is an allergen.
